Choovej worked for many years as Head Chef at the Novotel in Central Bangkok where he met Aoy who was the Specialist Chef in Thai dishes also at the Novotel. Choovej has attended courses throughout Thailand to extend his repertoire and has travelled to other countries in Asia including Laos and India in order to widen his knowledge of cooking techniques and the use of various ingredients.
